2-Hour Turkey

Ang, I was just about to post the link. Thanks. My only comment is that I would turn

the turkey 180 degrees at the halfway point just to make sure the bird is cooked evenly.

 
I've made this high-heat recipe from Food & Drink several times. It's wonderful!

Warning: it really smokes up your kitchen!!

High-heat Roast Turkey

The high heat method of roasting turkey actually dries out your turkey less than slow roasting, and it cooks faster too.

Serves about 10

1 14-pound turkey (may be brined or not)
stuffing of choice
1/4 cup butter
salt and pepper
1 tablespoon dried sage

Pre-heat oven to 400 F (75 C). Stuff the turkey and rub all over with butter. Season well with salt, pepper and sage. Truss with string to hold its shape. Place on a rack that is sitting on a large roasting pan. Roast for about 2-1/2 hours, basting occasionally with the fat, or until an instant-read thermometer reads 170 F (75 C) when inserted in the thickest part of the thigh section and the juices run clear. Remove from oven and let rest for 15 minutes. The bird continues to cook as it rests. Carve and serve.

Note: If your turkey is larger than 14 pounds, add 10 minutes to the baking time for each extra pound.

Thank you for that link. Sounds like Sylvia had a great sucess with it! I was comparing both recipes and they look slightly similar in methods. I just love that Safeway's site recipe has that "How-To" video and pictures/tips that make it easier for me to follow. They also have great ideas on the site for that left over turkey meat, you have to check out the turkey enchiladas. I am saying goodbye to the ordinary turkey sandwiches...LOL!

Safeway

This turkey ruined my Thanksgiving last year. Bloody poultry is not appetizing!

I hate how hard Safeway is pushing it this year. You see the same fake question posed by their employees -- "Have you heard of it?" on just about every food board out there. There sure are spending a lot of money promoting it.

Traditional Recipe Broken

I'm sorry you had a horrible experience with it. I don't think that me working for Safeway has anything to do with what recipe you would be doing this year. So many people seem to be breaking traditional recipes now a days anyway with all the smoking, frying, and high temperatures. Since I work for Safeway, I was able to come across this recipe. Since it got me interested, I wanted to see how many people have heard of it as well and will be trying it. I will be trying this recipe with my mom this year. We have read it over and found it easy to follow and are curious to see how well it works out. smileys/smile.gif

I've heard 50/50 feedback on it. I'm sure everyone has their own reasons why it was success/failure.
