2 year old Turkey update

I had it thawing in the fridge this week and this morning, when my internal alarm went off at 3:30, I got up, did a quick check. No smell and the only freezer burn appeared to be at the wing tips, otherwise it was in good shape. So I cleaned it, shoved in whatever herbs I could find in my 'garden' in the dark, a little salt & pepper and into the 350 oven it went. Since this was just for stock, I did no brining, no special prep, nothing. Nada. Zip.

As hubby came home at 8 I was pulling the bird out and he says "wow, sure looks pretty for being so old." I said "Well, I love you to, you old $%$#$%&*&^%$%". He meant the turkey. Anyway, he was hungry by this point and at 8:30 we sat down to smashed potatoes and gravy, and 2 year old turkey for breakfast.

Turned out the turkey was the moistest and tastiest I've ever made. Kind of depressing, all that work in years past and this after-thought of a bird came out better than any of them.

So now we are thinking we should pick up next years bird this year...

The only thing I can think is that our freezer is not frost-free and it was at the bottom, not subject to temp changes when we opened and closed it. For the record, it was a no-name brand that they order by the ton to give out to employees. The package just says "young turkey".

 
This is so funny! I'm so glad it turned out well for you. I just re-read an article ...

in the New York Times (thanks to rosie for the link!) that discusses all the different ways we fuss with our turkey preparation. Near the conclusion, the author asks dear old mom why some of her turkeys turned out great and some didn't. To quote the article... "If you get a good turkey, you'll have a good turkey," said my mom, who always buys whatever is on sale. "If you get a bad turkey, it'll be a bad turkey."

You must have got a real good one!

Thanks for the update...I've got an undated bird in the freezer too. I'm going to do what you did - if it looks/smells fine after it's defrosted, I'll make "stock" out of it...and take it from there :eek:)

Congrats! Nice breakfast, yum. Have had great results with store brand turkeys myself

in the past...and with simple preparations like you did. Especially the ones that say "young turkey". Happy Thanksgiving to you.
