I had more bananas than usual that needed to get used up. I was thinking of banana cream pie or....Not sure. Then I came across this recipe. It's so good! I can hardly wait for it to chill. My one substitution, I used the coconut cookies (crushed) instead of chess cookies. Next time I'll do that again and add a dusting of toasted coconut on top. This is a crowd pleaser!

Ingredients

2 bags Pepperidge Farm Chessmen (Coconut) cookies

6 to 8 bananas, sliced

2 cups milk

1 (5-ounce) box instant French vanilla pudding

1 (8-ounce) package cream cheese, softened

1 (14-ounce) can sweetened condensed milk

1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Directions

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.

In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

It is sooo good...

I was intrigued by the use of the Chessman cookies. I made it for a birthday desert for a 20 something son of a friend. After everyone was served,
He took the pan and ate the rest. Mind you, most Minnesotans have never seen banana pudding before.

I think the Chessman are better than vanilla wafers as they don't get quite so mushy.

 
In the same vein, we ordered Emeril Lagasse's Banana Cream pie and it came with a

gravy boat of warm hot fudge to pour over it.

But what intrigued me most was they didn't slice the bananas into thin coins. They took each banana and cut it into 1" long pieces. There was cream spread on the bottom and then more cream spread over it to keep everything in place.

I really liked that idea because nothing can turn me off quicker with Banana--anything than when those pieces start to go brown and mushy and seepy.

Note to self: the puddling layer would be awesome as a cake filling. I'm thinking of a rolled cake.

I made this a couple years back.

And I have to say we were greatly underwhelmed. I will take traditional banana pudding with a wonderful and simple cooked vanilla pudding any day over this.

The problem for us was all the chemical nastiness from the instant pudding and the cool whip. We don't eat things like that, and when I taste them, it is a real shock to the taste buds. I'd thought about trying it again with a real cooked vanilla pudding and using whipped cream instead of cool whip, but just never got around to it.

 
Just made this to take to a neighbor's for an impromtu dinner get together - looks great!

Perfect for my giant bag of bananas from Costco.

 
Everyone raved about this and went back for 2nds...after already having a Mexican feast of a dinner

We had homemade carnitas with all the fixings, my Mexican neighbors went all out and even after we were stuffed, this was so good many had 2nds and 3rds. A hit!
