I don't see on any recipe anywhere that you cover them when making, stuffing & reheating as one continuous operation. I realize (and read) it'll take a bit longer in the oven for my 2nd baking since these have been chilled for several hours, and I sure don't want to dry them out. TIA!

BTW, thanks to all you fine cooks for the myriad Twice-Baked Potato recipes on this site. I've eaten them countless times, but never made them in my life, and on Wednesday I received a catering order for a dozen to be delivered today along with a beef tenderloin, homemade herbed yeast rolls & a Raspberry Hazelnut Tart.. You have once again come to my rescue!

 
Wigs, when I reheat a lot of twice-bakeds this is what I do

I put them on a rack above about an inch of water (water heated to the oven temp), loosely cover the whole batch with foil then heat at about 275 or 300. I take the foil off about 10 min before taking out of the oven. Length of time in the oven depends on the size of the potatoes and how cold they are. If you have a few hours before delivery time, just take them out and leave on the counter to bring as close to room temp as you can before putting in the oven.

 
CathyZ, you are a culinary genius! Yr idea for rewarming twice-baked's worked very well.

The filling stayed moist, and the skins remained soft which is just the way I wanted them.

Scooping out the potato pulp for mashing was slow going until it dawned on me to use a grapefruit spoon, and that made the job easier.

I basically followed MiainMD's recipe from Post #3290 on 8/31/2006 except I subbed real cream cheese for Neufchetal and added some whipping cream to loosen. They were delicious!
