Found a half of a fresh turkey at the store yesterday and since we're having a cool spell, I'm going to roast it for dinner tomorrow night. I thought I'd try something a little different, rather than just roasting it with onions, celery, and carrots this time.

Dry rub or marinate, it doesn't really matter, as long as it doesn't contain too much cilantro (ugh!).

Any ideas? I'm making the cranberry-apple chutney that I just posted. And we'll have mashed potatoes and probably some vegetable in season, maybe something using my papaya. Thanks.

I found two in Raichlen's BBQ USA: (more)...

2 T maple sugar or light brown sugar
1 T sweet paprika
2 t black pepper
1 t kosher salt
1 t garlic powder
1 t celery salt
1 t onion powder
1/2t cayenne pepper
1/2t dry mustard

for 1 5 pound turkey breast

or

2 T poultry seasoning
2 T coarse salt
1 T dry mustard
1 T black pepper
11/2 t garlic powder

for one 12 pound turkey

...and 39,000 messages on this forum! Thanks charlie - the first one looks like the one I'll be

using. Funny, I was flipping through some recipes online and the one that caught my eye was very similar to this - Brown Sugar BBQ rub I think it was called. Thanks.

I used the first one. Very good.. reminded me of Beer Nuts from college days!

and gave the skin a beautiful tan, slightly hot and spicy flavor. It was almost 7 lbs and I cooked it at 275F for 4 hours. It was perfect. Thanks for the suggestion.

I should have you all over for leftovers... white meat, anyone? I have a ton leftover - we ate the dark meat - so juicy and good.
