I forget how easy and great this is but I made it tonight. I have made a fruited and fruited/curry rice with it before but since we are trying to cut carbs I cut up some dried apricots and mango strips (I know carbs but...) and added just a little more water since I knew they would hydrate some during the cooking. And because I keep it on hand these days since it is one of my favorite flavors, I stirred in a spoon of tamarind paste.

Turned out great! The flavors and textures just all work together so nicely. Hubby is still always surprised when I say this has curry. And the house smells so wonderful.

I also like that recipe. Instead of turning the drippings into a sauce I use them in carrot soup. After refrigerating overnight, I use the fat to sweat aromatics and carrots. I add the defatted drippings and some chicken stock and simmer until the carrots are soft enough to puree. Adjust the seasoning and add enough chicken stock to get the proper consistency.
