5 minute peppermint mousse

Ingredients: 1 tsp unflavored gelatin

1 Tbsp cold water

2 Tbsp boiling water

1/2 c sugar

1/4 c Hershey’s cocoa or whatever you prefer

1 tsp vanilla

1 c heavy whipping cream (very cold)

1/2-1 tsp peppermint extract

Directions: Sprinkle gelatin over cold water in small bowl; stir and let stand 1 minute to soften. Add boiling water; stir until gelatin is completely dissolved (mixture must be clear). Stir together sugar and cocoa in small cold mixer bowl; add heavy cream,extract and vanilla. Beat at a medium speed until stiff peaks form; Pour in gelatin mixture and beat until well blended. Spoon into serving dishes. Chill about 1/2 hour.

May be topped with crushed peppermint candy.

Number Of Servings: Four ½ cup

Easily doubled

 
Thank you, thank you. Do you have any suggestions on what I could use if not

using the cocoa? Maybe instant vanilla pudding? Or maybe I could just leave that ingredient out.

 
Ooooo- sorry! Thought you wanted the chocolate. I really think you'd have to find a new recipe.

Why not make vanilla pudding and just fold in some whipping cream and extract?

 
Good idea, though. You should make a trip to

the Turning Stone though, and get the Harvest Buffet. The mousse is worth the trip - it was so light and pretty and delicious. And it's so pretty there this time of year.

 
I think I would try using 1/4 cup of powdered sugar for the cocoa. It might work and wouldn't add

too much extra sweetness since it's only 1/4 cup but it would give you that extra consistency that the cocoa would give. Maybe??

 
I was there 2 weeks ago for a wedding. We decided to stay the weekend and had breakfast

the next morning at the Shenandoah Lodge. Really beautiful. Do you go often?
