Ok, this really isn't Harry Chapin Bread, but everytime I make it I end up humming that song.

Very intense banana bread. Moist and addictive. Stays fresh about a week. My mama taught me that any sweet bread that went a little stale was always wonderful toasted in a skillet with butter. Anyway, happy Mothers day. I have no idea where this recipe came from, I have been making it for 20 years.

Heat oven to 350 degrees. Grease and flour pan.

3 cups granulated sugar

1 1/2 cups butter flavored crisco

9 large ripe bananas

6 eggs, well beaten

3 3/4 cups cake flour

1 1/2 tsp salt

3 tsp soda

1 cup (i like more) pecans

Cream sugar and shortening. Add bananas and eggs. Combine flour, salt and baking powder and stir into creamed mixture. I bake this in an angel food pan for about 1 hour 10 mins. Test it to make sure, because the size of the bananas makes cooking time different. This also makes 10 mini loafs and freezes wonderfully.

Warning, aroma draws single men to your door.

(Use your hand mixer after creaming sugar and shortening to liquify your bananas. They need to be very watery)
