Depends on what I am cooking. The dull side. . .

is supposed to absorb heat better and the shiny is supposed to reflect heat.

This I what I heard many years ago, and I usually follow the advice, except when I don't. . .

 
Me neither. Perhaps there is a difference but my kitchen is much too out of control for me to notice

 
Years ago I burned out an oven element. The repairman said it was due to using foil shiny side out

especially at higher temperatures and recommended using dull side out so I got in the habit of using dull side out ever since to avoid any more costly repairs.
