(my second appearance) and they were a success with customers as well as moi.
I used two full cups of Libby's pure pumpkin. Libby's knows darn well that their 14 oz. cans will yield slightly less than two full cups and force “exacto-type” recipe followers like me to purchase two cans. Next time, I'll consider a larger can for doubling the recipe. I used three jumbo eggs that I whisked slightly before adding to the wet mix because I always buy jumbo eggs.
I used and soaked golden raisins in warm water and chopped California walnuts that I bought at Richard's Foodporium's bulk section here in Bradenton for a steal. The prices they charge for walnuts even in Walmart are way too much.
I so loved these pumpkin muffins and I have the pleasure of noshing on two duds that I have left in the fridge.
I know Sandi in Hawaii made these too. Anyone else? If so, speak up so that we can put this in T & T.
P.S. I also sell my Blend de Provence at the market and it's been selling pretty good. I slice up a baguette and drizzle olive oil in, stir, and sprinkle my blend in to taste. I so love doing the farmer's market and being under a big tree with the wind at my back and people forking over cold cash... LOL
