A favourite week-night supper....Black Beans on Tortillas....

Fry up some chopped bacon and when starting to brown add some onion slices and soften them.

Add a few chopped soft sun-dried tomatoes(Pour off how ever much grease you need to first)

Add 2 minced garlic cloves and 2 or 3 sliced chorizo sausages.

Cook till the sausage is begining to brown, stirring.

Add 2 or 3 tins black beans. Use the juice of only 1 tin.

Leave the above mixture to simmer gently.

Heat some evoo in a frying pan and while the oil is heating.....

Set out the following:

Chopped coriander

Chopped onion

Chopped jalopena pepper

Grated cheese (we like Gouda and Parmesan but the choice is yours)

Sour cream

Sliced avocado with fresh lemon juice squeezed over.

Add 2 minced galric cloves (or to taste) and a handful of chopped coriander stalks to the beans and stir, leave on the heat.

Fry tortillas in the oil...the best ones we like, as they turn so nice and flakey when fried, are the long-life ones you buy off the shelf. We use small ones and do 2 each.

Set out plates and call everyone together. As the tortillas brown plate them with a good dollop of the bean mix in the middle.

Let everyone add what ever toppings they enjoy. We like to add the avo last, it looks so cool!

Judy in Mass'. salsa goes well with this but whatever salsa you like is good too......I have one now of tomatillos I made.
