A few ways to use Gochujang that are new to me from Fine Cooking

Mix into a good mayonnaise to kick up a roast beef sandwich (yummy)

Combine with sour cream and fresh lime juice to top tacos and chili (used on home made chili...nice)

Combine a little gochujang with evoo and sesame oils, fresh orange juice, rice vinegar, grated ginger, salt and pepper for a sweet and spicy vinaigrette that can double as a marinade.

Add to ketchup for a hit of heat.

 
This is awesome. I love Gochujang. I make the Momofuku Bo Saam often. Never know what to do with

the leftover Gochujang. This helps a lot! Thank you. And if you haven't tried the Bo Saam, do. It's a fabulous crowd pleaser. Economical too. Recipe's on the NYTs website.

My friend mixes gochujang into the flavoring mixture for fried rice

4 Tb gochujang (Korean red pepper paste)
2 Tb vinegar
2 Tb sugar
1 Tb garlic juice
1 tsp ginger juice
1 tsp sesame seeds

She adds the usual ingredients to make fried rice: onion, green onion, carrot, chinese sausage or spam or chicken, egg at the end (but she omits it for me!), greens, tofu, whatever you like, and then stirs in this mixture right at the end. It's fantastic.

Asian markets carry garlic and ginger juice, it's really rather cool.

I've seen her make her own when she ran out - you know the little ginger graters that are a piece of porcelain that has bumps on them? Mine is shaped like a fish. After grating a piece of ginger on that you can use a corner or a tea towel to gather up the ginger (works for garlic too) and squeeze out the juice. Or, you can do what I do and just add a tsp of the grated garlic and ginger to the mixture...
