A friend has asked for pineapple upside down cake for her birthday. Can I use fresh pineapple?

I haven't made one of these in years...so far back that the closest a fresh pineapple came to being in our home was in a magazine photo. So, no personal experience here.

I know you can't use fresh pineapple in jellos...will it affect the cake?

Go for it. I've used fresh before. Just make sure it's nice and ripe and you trim it properly.
