PB & Chocolate Frozen Dessert
12 peanut butter sandwich cookies
2 Tbs. butter, melted
8 oz. cream cheese, softened
½ cup creamy peanut butter
½ cup sugar
2 tsp. vanilla
12 oz. whipped topping, divided
2 oz. semi=sweet chocolate, melted
Crush 8 cookies into fine crumbs. Mix crumbs and butter. Press into bottom of parchment paper-lined (lengthwise strip) 9 x 5 loaf pan.
Mix cream cheese, peanut butter, sugar and vanilla until well blended. Gently stir in 3 cups whipped topping. In a small bowl, mix ½ cup of the cream cheese mixture with the melted chocolate.
Spoon half of the remaining cream cheese mixture over crust. Top with chocolate mixture. Cover with remaining cream cheese mixture. Freeze until firm.
Invert onto plate. Remove parchment paper and re-invert onto serving platter. Spread remaining whipped topping on top. Coarsely break the other 4 cookies and sprinkle over whipped topping.
