A good reason to use a scale when baking

I've been using a scale for years...possibly a decade? so everything Stella Parks mentions is spot on. But what I didn't realize was something she mentions in "Using a scale makes me Neo in the kitchen."

Simply put, she shows by the simplest of example how weight allows you to SEE the TRUE ratios between ingredients. LIGHTBULB! I never realized that before; just loved the consistency and ease of using weight (two of her other comments). That "ratio" comment was worth its own weight.
