O.K. it was me squakin'--got home Thursday a.m. Sweet Potato Poundcake inside
Two months surveying off Northern California coast.
That was the tiring part, working only 3-5 miles off the beach, were in a constant swell. So vessel was never still.
Had my same group of scientists from the last last four years, great dudes and dudettes!!
Boat took some getting used to, stoage space was limited, so sort of all over, some other things that seem to be time consuming, but will be better when I go back now that I am used to them.
Two things I had not used before on a job--only had one oven, so got a 18 qt. roaster oven. Remembered them from long ago when people used them around the holidays. and had used them on occasions for chili etc.
But found it amazing, did a prime rib, a big turkey, corned beef, several crisps and cobblers, bread pudding and roasted potatoes and other veggies.
There was a cute little Kitchen Aid Food Processor--sort of pushed it behind the toaster. One morning needed to chop some sausage and though, hmmmmm--ended up using it a lot.
Didn't try too many new things--but this was a winner from last season-

Sweet Potato Pound Cake Recipe #89522

SERVES 12
1/2 cup shortening
1/2 cup butter, softened
2 cups sugar
6 eggs
3 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon baking powder
1 cup buttermilk
1 cup cooked pureed sweet potatoes
1/2 teaspoon almond extract
1/4 teaspoon coconut extract
1/4 cup slivered almonds, toasted and finley chopped
1/4 cup flaked coconut
Cream shortening and butter; add sugar, beating well.
Add eggs, one at a time beating well after each addition.
Combine next 4 ingredients, stirring well; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture.
Stir in sweet potatoes and flavorings.
Grease and flour a 10-inch Bundt pan; sprinkle almonds and coconut over bottom.
Pour batter into pan; bake at 350 degrees for 1 hour and 15 mins.
Cool 10 mins and remove from pan.
