How did you get that shape both outside and on top??

 
not my "invention".... and in fact it is surprisingly simple.....

post will be published on Sat at midnight, it's not quite ready yet, a few tweaks needed here and there, but I was so happy about this bread, I wanted to share

anyway, the four balls of dough are rolled out, a chocolate filling spread on top of the middle three layers - then you slice the dough in 16 sections as the photo shows. Working on two sections at a time, you hold each with one hand and twist outwards. That is pretty much it. The dough will have a snowflake, star-shape thing going on

the secret is not to slice all the way to the center, and make sure each ball of dough weighs the same

It should be better explained on the blog, with a recipe for the chocolate hazelnut filling I used.

 
rich, but not too sweet....

... I had a piece on the day I made it (Mon), then we took it to the department yesterday and when I went upstairs to maybe try another piece before coming home for lunch I found only crumbs smileys/wink.gif

the bread is rich as any brioche, but the filling with ricotta and hazelnuts matches well, it is barely sweet.

.... I really want to make a savory version in the future, as I am not too wild about sweet stuff.

Someone in the group of bakers was going to try a "pizza version" this week, I am sure it will be amazing.

the version they made with pesto and cheese looked spectacular
