use apple juice instead.

I am the 'red wine type' so I don't normally have white wine in the house. I buy apple juice that is a little on the acid side, and I make sure there's no sugar added. Over here, they sell apple juice in two cup bottles, so I don't have to buy a whole quart just to make a dish.

I have used apple juice in everything from cakes to paella, chicken stew and fish sauces and it works like a charm!

I can't stand the taste of wine. (or coffee, for that matter)

Difference between them is that I can cook with wine and it works. I cannot stand anything that has coffee or any of it's secret identities in it, especially chocolate. It ruins it for me.

Because this means we rarely have an open bottle of wine sitting around I usually buy the 4 packs of 8 ounce bottles. My wine drinking husband says they taste fine so they are ok for cooking. (He'd rather I open a whole bottle so he can enjoy it, LOL.)

 
I use vermouth and keep it by the stove. But the apple juice sub is good to know.
