A question about storing sun-dried tomatoes. . .

So, I've been given a half pound of some really nice home-made sun-dried tomatoes. I want them readily usable for salads and sandwiches so, have put them in a jar and covered them with olive oil to plump them up a bit.

My question is; do I need to refrigerate the jar or can they sit at room temperature? Also, what happens if I add herbs or chili flakes. While I have a fairly good idea, I figure some of y'all will have done it before.

I would keep them in the fridge

And bring them out a few minutes before you want to use them if you don't like them cold-cold

I haven't tried herbs, but I suppose the oil would take on the flavour of the herbs? no?

 
How long will these keep and do you have to be concerned with botulism? The plum tomatoes I get

aren't very acidic.

 
I made these for years and did not refrigerate them. I also had

garlic and herbs in it. It was an old recipe from Sunset. They were delicious and no botulism, but once I read about the risk, I haven't done them like that again. Now I refrigerate them with olive oil to cover the contents. I take out the tomatoes to use and it doesn't take long for them to come to room temp. They are delicious and if you use garlic and herbs, the leftover oil is fantastic. You could even freeze them if you have a lot, then thaw when you want to use them. I think I like the leftover olive oil better than the tomatoes themselves. You might consider chopping up the sundried tomatoes and adding the herbs and oil, and freezing in a thin layer in a zip-loc bag. Then you could just break off a chunk and add to a recipe when you need to.

 
I dry mine from our garden and I keep them in the freezer until I want to make marinated tomatoes...

then I rehydrate them in hot water soak for 30 minutes & drain. I then place them in a jar w/ garlic, fresh chopped herbs (rosemary, basil, marjoram, oregano, thyme), red pepper flakes. Then cover with regular olive oil and keep in fridge. They will keep well for a month or so. They can develop mold, so don't make more than you will use in that length of time.

Once, before I learned to rehydrate first, I did just put them in olive oil but they never got soft but did go bad.
