A question for anyone familiar with chum salmon. Like it?, don't like it? how is it

different than other wild salmon tastewise, cookingwise? We're starting to see an abundance of Keta salmon here in the markets, a first for me to see or even hear of Keta. I'm told Keta is chum...is anyone familiar with it?

 
Had a few bites smoked, not awful.Understand as long as it is caught in the ocean it is o.k.?

Once it gets in fresh water it is mushy.
It is also called dog salmon--In the Interior it is used as dog food.
I was surprised to see it marketed, will be interesting to see what others think??
It is quite pale in color.

Nan, are these the "pinks" or "humpys"? It's an "even" year, so we'll have lots in the rivers.

not great eating, I agree with what Nan said, and I have put them in the smoker and it's good. BUT, I think what you are getting in the stores would be ocean caught and better quality than what we end up with in our rivers that are too old and mushy. In some years, you can practically walk across the water of some small rivers/streams cuz there are so many pinks spawning and dieing.

 
I remember very well the rivers there so loaded with salmon,

we swore we could walk across the backs of the salmon to reach the other side of the river...it was totally amazing and an awesome sight to see.

Nan and Ang, I appreciate your feedback. Didn't think about when these might be caught (as in ocean vs river and already spawned) and wonder if the fishmonger even knows...I doubt it. Okay, I'll suck it up and give them a try. How bad can they be, right? ;o)

 
well around here, we say, "when the tide is out, the table is set". Look for bright colored scales.

Fish Dude should know. Sort of the same rules
for any fish, some just hold up better?

Nan, funny story about dogs and feeding them salmon. First year in Nome for Iditarod and there was

a second race after that called Hope/Nadezcda(sp) which brought dog mushers over from the Russian Far East(mostly Siberian Yupik natives) and they raced over here in Western AK and finished in Russia, or the other way around. Anyway, their dogs were very big and hairy and "earthy", to say the least, and smelled strongly of fish/seal oil(a very distinct smell!). I learned a lot that first year living in Nome!

Reporting back on the Keta. It was pretty decent. The texture was

firm and the flavor was mild. The $5.99/lb price made it affordable too. It's not king salmon but I'd probably buy it again.
