a question re Fish Tacos. I notice many of you love them; I've never eaten them. So I have this

I do it in chunks, Marg. DH has batter fried and I bake mine. I top with slices of

avocado, tomato, chopped green onion and shredded lettuce. Dress with a mixture of sour cream, minced chipotle in adobo sauce, lime juice, zest, cumin and a pinch of salt.

I also wanted to say that I love my fish tacos with coleslaw, especially when using white fish

I try to match my coleslaw dressing with the fish I'm using. I have not tried salmon tacos but my most unusual fish taco is a sea scallop taco. So yummy, if you like scallops.

 
I've copied the sauce to use when the kids come to visit and maybe we'll have some fresh fish.

 
This is what I was mulling over. The way I make fish sandwiches. Anyway, we ate them but they

were not huge hits. H wants me to stick with fish sandwiches.

My fish pieces are "chicken finger" size/shape, that's how Rubio's does their original recipe. Yum!

When I was in college, I used to go to the original Rubio's restaurant in San Diego all the time. Oh what a happy day it will be when they open the first Rubio's in Canada. :eek:)

REC: Cumin sauce for fish tacos

I never make fish tacos without this sauce. It's a fish taco staple in my house.

Cumin sauce

1 cup plain yoghurt
1 large tablespoon of sour cream
1 large tablespoon of mayonnaise
1/2 teaspoon cumin
juice from one lemon
salt to taste.

Mix all the ingredients in a bowl and refridgerate until it's ready to be served. The taste of the sauce will mature in the fridge. Taste it before you place it on the table. If it tastes too bland or too yoghurty, add more cumin. Some of you like food tasting hotter than I do, and those of you who do, might want to double the amount of cumin.

 
Mimi, I'm sorry to say, the original Rubio's chain really deteriorated when they expanded...

The fish is now pre-breaded and frozen. Very mushy. The tortillas might be frozen too--they're definitely not what they used to be.

It's sad. I used to eat at the Long Beach location often, years ago, and when I heard a national ad on the radio I went out of my way to go back--it was awful. Even the beans were bad.

At least it's not such a complicated recipe to duplicate at home.
