In early shows Rick Bayless did not char all his veggies for salsas like he does now. I did like he has shown lately and lightly charred my tomatillos, onion and pepper for a green salsa. I really like it better the other way. I always forget that one of the popular Mexican places here's table red salsa is charred tomato. I much prefer the clean bright and fresh flavor without the burned/sweet taste. It always annoys me to get this.

 
I agree. If a little charred taste is good, it doesn't automatically follow that a lot is better

Charring everything in a salsa makes it taste muddy to me.

The same goes for grilled chicken with grilled veggies and grilled potatoes and a grilled iceberg wedge for a salad. Leave a little room for contrast!

 
It's not even authentic. I can't think of a single Mex-Mex (as opposed to Tex-Mex)

place that does this. I hate burned-tomato salsa.
