I don't know where this came from originally, my son gave me a handwritten copy. I made it this morning and it is delicious.
6 slices of bacon, chopped
1 C diced zuchini
1 C diced russet potato
1 1/2 C fennel chopped
1/2 large, sweet onion, chopped
6 C fresh corn kernels
3 C chicken broth (I had homemade on hand)
1/2 C cream (I didn't use)
1/4 t. cayenne pepper and salt to taste
2T Chives
Saute bacon and remove and drain. Saute vegetables in bacon drippings, add broth and seasoning and simmer until vegetables are tender. Puree with a stick blender and stir in cream. Top with crumbled bacon and chopped chives and serve hot.
