Abundance of veggies at the farmstand for a great price so I whipped up Briami for the 1st time

Husband is napping I may have to wake him up to get the dish away from me. It is so GOOD! I'm just eating it with a portugese bread and feta cheese smeared on top. I think I may have to go get some pita bread so we can all have this for lunch tomorrow, if there's any left.

I added more garlic than what was called for and cooked it for 1 1/2 hours. I left out the potato.
