We've discussed granola bars before and how delicious Gene Hamshaw's is. I took her recipe, added some things we like, compensations for blood sugar, etc. I took some to my Dr and he liked them so much he didn't want to share with anyone. They are addicting!
Marsha's Young Power Granola Bars
1/2 c coconut oil
1 c peanut butter (my favorite is Tree of Life Chunky)
1 scoop of Dr Young's protein powder (or your choice) (1/4 c)
1 c pumpkin seeds (plus add just a few sunflower seeds) (6 tbsp)
2 c slivered almonds
a light sprinkle of Bee Pollen
1/4 c ea. dried cherries and raisins
1/4 c dark chocolate chips (my favorite is Sunspire Organic 65% cacao chips)
I like to blend all the above together in my stand mixer.
After the above is blended, I add just a little bit of the coconut nectar (below) and blend again.
Then I add
2-1/2 c. whole oats and the remaining, 1 c. coconut nectar
Everything seems to hold together and blend together better this way. Otherwise I have found the chocolate chips and pumpkin seeds seem to stick to the bottom of the bowl rather than being incorporated within the mixture if I don't use this method..
I like to spread this into a 11 x 7 glass baking dish. I put the dish into the freezer for about an hour, then slice them into bars. I keep the bars in a zip lock freezer bag and we eat them right out of the freezer.
