talking about awhile back. My husband ordered the book for me online. This is from the first of two cookbooks under that name so I don't have that cookie recipe you were looking for. I consider it more of a crisp. Whatever it is,it is yummy served warm over vanilla ice cream

Peach Strudel

Into the bottom of a buttered baking dish (oblong) put thick layers of peaches. Sprinkle with cinnamon and sugar mixed. Dot with lumps of butter. Into mixing bowl sift 1 cup of sugar, 1 tsp. baking powder, 1 cup of flour, 1/2 tsp. salt, into this break 1 egg. Mix until crumbly. Sprinkle over the peaches. Bake in 350 oven till the crust is brown about 35 mins. Serve warm with vanilla ice cream.

I e-mailed the blog to request the recipe. No luck.

I eventually contacted Texas Coop Power thru their website. They wrote: "Both the Typically Texas I & II Cookbooks are out of print. However, I keep a copy in my office for just such emergencies! Below you'll find that Chocolate Chip Oatmeal Cookie recipe. You might be interested to know that our new cookbook, 60 Years of Home Cooking, has selected from both Typically I & II, as well as recipes from the last 60 years of Texas Coop Power..."

I read a blog where someone said these are the best:

Chocolate Chip Oatmeal Cookies

1 cup shortening
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp baking soda
2 cups Quaker oats
1 cup chocolate chips
1 cup chopped peans

Cream shortening and sugars; add eggs and mix well. Add vanilla.
Sift flour, baking powder, salt and soda together, and add to creamed mixture.
Then oats, chips and pecans.
Drop from teaspoon onto greased cookie sheet.
Bake at 350° for 12-15 minutes. Do not over bake.

 
Do you think I could substitute butter for the shortening?

I'm sure the flavor would be better, but worry about then having flat cookies. Does anyone have any experience with this recipe? I love oatmeal chocolate chip cookies!!

I have been making these for years with butter and/or margerine>>>>>>>>>

my recipe varies amounts slightly but is very similar to this one. The cookies are a little flat but wonderful. I use walnuts instead of pecans.

 
Gail - just made this with blueberries...

because it was what I had in the freezer and DH wanted something sweet but not too fattening - it was a hit. Will keep using but I am goign to try with just egg whites next time to see if I can cut the fat more and depending on fruit, may try without the butter. But it's a keeper.

Baked the Chocolate Chip Oatmeal Cookies this weekend with no substitutions and pecans >>

I think they tasted better cooled and crunchy-chewy then fresh hot out of the oven. Not flat at all. These cookies were very presentable.
