of anchovies hoping they would be better. They are, they are firm and less fishy tasting. However, there are a lot of anchovies in that jar. I'm wondering how long they'll keep in the jar in the fridge?

And is it true that the cans wouldn't have turned mushy if they'd been refrigerated before opening or did I just get some bad anchovies. And the expiry date is well into 2012.

 
I think a lot (not just in tins) are really poor quality.

Italian markets usually have better anchovies if you happen to have one nearby. The one by me has the salt-packed ones available by the ounce in the deli area so you can just buy a little if you need them. Also high-quality jarred and tinned ones.
