I did this one up today after taking the cheese quiz - I always make it slightly different from the last time, today I had a lot of stuff to clean up from the fridge and cupboards:

I boiled some shells in salted water with 1/2 an onion and a bay leaf - and drained

Made my white sauce with 4 tabs butter, 4 tabs flour and 2 cups milk - then I added:

1 cup grated sharp cheddar

1/2 cup grated grana padano

1/2 cup chopped up jarlsberg

a little bit of grated feta (maybe 1/4 cup)

After all the cheeses were whisked in I added:

2 tabs each yellow, grain and dijon mustards

a shake or two of paprika, salt and white pepper

Then I added about 1/2 cup of chix stock to loosen the mix a bit and mixed it up with my pasta - in the oven for about 40 minutes, topped with a bit more jarlsberg and under the grill a few more minutes.

It's a rainy day in Sydney, so we couldn't go sailing, instead, I cooked...

I love Martha's recipe. I also add a little blue cheese.

Martha's Macaroni & Cheese

Serving Size : 12

8 tablespoons unsalted butter (plus more for dish) -- (1 stick)
6 slices white bread, -- crusts removed
5 1/2 cups milk
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper -- or to taste
4 1/2 cups sharp white cheddar cheese (about 18 oz.) -- grated
2 cups Gruyere cheese (about 5 oz.) -- grated
1 pound elbow macaroni

Preheat oven to 375 F. Butter a 3 quart casserole dish; set aside.

Tear bread slices into 1/4 to 1/2" pieces and place in a medium bowl. In a small saucepan over medium heat, melt 2 tblsp. butter. Pour butter into bowl with bread, and toss. Set the bread crumbs aside.

In a medium saucepan set over medium heat, heat the milk. Melt remaining 6 tblsp butter in a high sided skillet over medium heat. When butter bubbles, add flour. Cook, stirring, 1 minute. While whisking, slowly pour in hot milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick. Remove pan from heat. Stir in salt, nutmeg, black pepper, cayenne, 3 cups cheddar cheese, and 1 1/2 cups Gruyere; set cheese sauce aside.

Cook macaroni 2 to 3 minutes less than manufacturer's directions until the outside of pasta is cooked and the inside is underdone. Drain and rinse macaroni and drain well. Stir macaroni into the cheese sauce and pour into prepared dish. Sprinkle remaining 1 1/2 cups cheddar cheese, 1/2 cup Gruyere and bread crumbs over top. Bake until browned on top, about 30 minutes.Transfer dish to a wire rack to cool 5 minutes; serve.

Martha' s is my favorite recipe, too. I made the cover recipe from the most recent Fine Cooking.

It was good - not as good as Martha's in my book, but it's lower in fat.

 
My current fave is Stonewall Kitchen's - both DH & DD liked it - rare to ge them both to agree!

four-cheese macaroni with thyme-parmesan crust

Trust us, this is not your ordinary mac and cheese. When you add fresh mozzarella, Fontina, Parmesan, and mascarpone cheeses to pasta, something out of the ordinary happens. We also add a layer of fresh mozzarella in the middle of the pasta dish, for the ultimate cheese experience, and scatter a mixture of grated Parmesan, thyme, and bread crumbs on top for a crunchy topping. You can make the dish in one large skillet or baking dish, or make it in individual ramekins, but you'll need to reduce the baking time. The dish can be assembled up to 2 hours ahead of time and baked just before serving.

Serves 6 to 8

Ingredients

1 pound short, textured pasta, such as macaroni, cavatappi, ziti rigati, or penne rigate
1 tablespoon unsalted butter
2 tablespoons olive oil
3 tablespoons all-purpose flour
3 cups milk, warmed
12 ounces fresh mozzarella cheese, half grated and half very thinly sliced (about 3 cups total)
1 cup freshly grated Parmesan cheese
8 ounces Fontina cheese, grated (about 2 cups)
1/4 cup mascarpone cheese
Salt and freshly ground black pepper
2 tablespoons plus 2 teaspoons chopped fresh thyme leaves
1/2 cup plain bread crumbs
To prepare
Place a rack in the middle of the oven and preheat oven to 400 degrees Farenheit.

Bring a large pot of lightly salted water to boil over high heat. Add the pasta and cook until barely al dente, 7 to 9 minutes. Drain, return to the pot, and set aside.

Meanwhile, melt the butter in a medium saucepan with 1 tablespoon of the olive oil over low heat. When the butter has melted completely and begins to sizzle, add the flour and whisk until combined. Cook, stirring constantly, until the mixture begins to bubble, about 1 minute. Add half of the warm milk in a slow, steady stream, whisking until the mixture is smooth and begins to thicken, about 2 minutes. Add the remaining milk, whisk again until smooth, and increase the heat to medium-high, stirring frequently, until the mixture comes to a boil. Remove the sauce from the heat and add the grated mozzarella, half of the Parmesan, and all of the Fontina and mascarpone, whisking constantly to prevent the cheese from becoming lumpy. When the sauce is completely smooth, add salt and pepper to taste and 2 tablespoons of the thyme.

Pour the sauce over the pasta in the pot and stir to combine completely. Spoon half of the pasta into a large oven-proof skillet or a roughly 9 x 12-inch baking dish, or several smaller dishes (ramekins work really well) and arrange the mozzarella slices evenly over the pasta. Pour the remaining pasta over the cheese layer and spread evenly.

Mix the remaining Parmesan cheese, the remaining 2 teaspoons thyme, and the bread crumbs together in a small bowl. Sprinkle the mixture evenly over the top of the pasta. Drizzle the remaining tablespoon olive oil evenly over the crust.

Bake the pasta for 30 to 40 minutes (smaller dishes will bake in 15 to 20 minutes), or until the cheese is bubbly and the crust is golden brown. Serve hot.

Favorite variations

Substitute Gruyere, Emmenthaler, or Swiss cheese for the Fontina.
Substitute crumbled fresh goat cheese for the mascarpone.
Add 1 cup chopped cooked ham or chicken to the sauce before pouring over the pasta.
Add 1/2 cup chopped scallions (white and green parts) or finely chopped yellow onion to the cheese sauce.
Add 1/4 cup chopped parsley leaves, 1/4 cup chopped chives, and 2 tablespoons chopped rosemary leaves to the cheese sauce.

Thanks, Orchid...made this last night and

we really enjoyed it. The James Beard recipe I usually make (at the link, in a thread of more macaroni and cheese recipes) calls for cream which I don't always have on hand when I get the urge for mac 'n cheese. Your recipe calls for just milk, which is great. Next time I'll try it your way and add a touch of blue cheese...yum.

Do you have any other recommendations from this book? I love the Italian

sausage and peppers pasta salad on page 189 although I use half red bell peppers and scale back the olive oil to 1/4 cup as was suggested in a magazine. I think that was after he went on the diet, lol.

I always roasted the peppers because until recently I didn't know you could peel them raw. The roasted peppers are very good in it.

Would love to know of any other recipes in the book that you like.

 
You're right, that pasta salad sounds really good.

I actually haven't made anything else from the book. In fact, I haven't even looked at it in quite a while but now that I checked it out again I see the Stuffed Shells recipe (p. 166) is calling me. Might have to try it with some leftover roast chicken from last night. The Scallops Provencale over Spaghettini (p. 100) also sounds nice. Hmmm, might need to leave this book out on the counter for a while. :eek:)

 
Forgot to say I halved the recipe...was perfect for using up the exact amts of gruyere & cheddar in

the fridge.

version. It was unbelievable!! Unfortunately I can't search our old forum, but it really was incredibly rich and yummy! I haven't made M&C in a while, but this rec would be my choice.

Will continue to see if I can locate the recipe...

1 lb macaroni, cooked

For the sauce:

3 oz. butter 3 oz. flour
3 c. cold milk 1 1/2 c. heavy cream
1 T. salt 1 tsp. black pepper
1 lb. Vermont Cheddar
4 oz. shredded Romano
4 oz. shredded Asiago

For the topping:
2 c. Panko 4 oz. butter, melted

To make sauce: In large saucepan melt butter
Add flour & cook 3 min. on med-high. Add
milk and whisk 'til dissolved. Cook on low-
medium 'til thick and bubbly. Add cream,
cheeses, s&p. Place cooked macaroni in 9x13
baking dish and pour sauce over.

Topping: Mix Panko and melted butter, then
sprinkle on top of macaroni. Bake preheated
350 degrees for 15-20 min. or 'til golden.

I usually add x-tra milk or cream. It tends to dry out.
I also cut this recipe exactly in half and it's
perfect.
