I've been in a make-do phase lately and today's "Make-Do-Doo-Wop" is KeyLime Tart:

Recycling cast of characters:

frozen egg yolks, thawed in frig

chilled Gluten-free lemon shortbread dough

Graham flour, kept in freezer

Keylimes, starting to yellow

Condensed milk, within date expiry stamp, but it's turned a darker shade....more like taupe pantyhose than beige and definitely darker than nude. Control top optional.

The GF lemon shortbread was a complete bust, but the ingredients were all good, so I added white and graham flour, grated the chilled log into that and added yogurt to hand-mix a tart base cookie dough. That's blind-cooking as we e-speak.

Filling is the concern: the Vitamix now sits on the countertop, guilting me into usage to lower the cost/use ratio. I wanted to try that trick Traca taught us about adding butter in a blender for a creamy lemon filling. Everyone went into the pool and I whirled it on high for ~5-minutes...digital read-out was 170 degrees.

The tart base just finished and when I went to add the filling to finish baking it, the filling was still steaming yet already firming up. So instead of the oven, it's waiting to go into the frig....without a final bake.

The question is: Will it be premeditated murder or second-degree manslaughter?

 
I saw, if the crust don't fit, you must aquit. I think you'll be fine. I just found the key lime dip

container in the back of the fridge from July 4th, smelled it,(no odor) said really? Took a brave taste and it was fine. But then of course when I ask myself if I would dare serve it, I'd be afraid to make someone sick. But I swear it was edible. smileys/smile.gif

I LOVE the "make do" phases! I have recently become so frustrated with the cost of groceries.

I try to make it a fun experience to try to use up what we have.

I recall Cyn mentioning her nephew used "EVERYTHING"

I unfortunately, tend to forget why I bought something or run out of time to use everything. (Hence, my post above re: Heavy Cream).

Anyway, kudos to you with the clean out the pantry, fridge, garden, et al!! : )

 
Basically, you've just made lemon curd, Marilyn, & U can eat that rt after it's cooked on the stove

top and has cooled. You're fine--there will be no homicides from yr kitchen w/ this creation.
