Oh good grief.
For Easter dinner for 6 tonight I am making a simple dinner of glazed ham, au gratin potatoes, roasted asparagus, salad and a double lemon cream pie for dessert.
Like everywhere in Hawaii, citrus trees of all sorts abound on Kauai so I asked my DH to bring some home from the yard of one of his handyman jobs. He did. Lovely little round yellow lemons. I bruised the surface just to make sure. Yup. Lemons. That was yesterday.
So today, Easter dinner is being prepped here. I started the double lemon cream pie. I zested 5 lemons, juiced a few and tasted the juice just to see how much sugar I'd need. To my horror I found the lemons were SWEET! Like oranges! Oh my gosh. I quickly Googled and found there is a variety called Citrus Limetta which is commonly known as Persian Lemon or Middle Eastern Lemon. I had to quickly add a LOT of bottled lemon juice and more corn starch to make the filling work but I did.
Have any of you used these odd lemons? When I Googled it said that you eat them just like oranges. Yow. Of all the thousands of citrus trees on this island my DH happened on a sweet one. Just my luck. LOL.
