Am I wrong that there was going to be a catering thread started?

Need help again!! Ideas for serving 250 - mostly men.

Venue will be without kitchen facilities.
Food will be prepared over two days in a commercial kitchen 20 minutes away then brought in cambros to site.
It will be served cafeteria-style and needs to look nice on the dish - not like it's from a high school cafeteria smileys/smile.gif
All food is homemade from scratch, with love!

Last two years:
Lasagna roll-ups with bolognese sauce, garlic bread, mixed greens salad with toppings bar

Chicken pot pie (Cook's Illustrated) with biscuits, same salad.

 
The chicken/bacon pasta recipe is best (IMHO) served a day after it's made -just rehead!

I would go heavy on the chicken, perhaps grilled separately and laid on top of the pasta (or perhaps not - just part of the pot)

INGREDIENTS
• 12 oz. spaghetti or angel hair
• 1 tbsp. extra-virgin olive oil
• 1 lb. boneless skinless chicken breasts
• kosher salt
• Freshly ground black pepper
• 6 slices bacon
• 2 cloves garlic
• 2 c. diced tomatoes (canned or fresh)
• 3 c. baby spinach
• 1/2 c. heavy cream
• 1/3 c. grated Parmesan
• Basil, for garnish
DIRECTIONS
1. In a large pot of salted boiling water, cook spaghetti or angel hair according to package directions until al dente. Drain and reserve 1 cup pasta water.
2. Meanwhile, in a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and cook until cooked through, 4 minutes per side. Transfer to a cutting board and slice into strips.
3. In a second skillet, cook bacon until crispy. Transfer to a paper towel-lined plate and drain, then chop.
4. Pour off half the bacon fat and to skillet add garlic, tomatoes, and spinach and season with salt and pepper. Add heavy cream, Parmesan, and 1/2 cup pasta water and let simmer, then add spaghetti or angel hair and toss until fully coated.
5. Add chicken and bacon and toss, then garnish with basil and serve.

The cheapest, easiest and most delicious thing you can serve a crowd!!

I like the side suggestions. I often serve pole beans cooked with onions and bacon or ham with pulled pork for a crowd. Potato chips are also a usual "go with" down here.
Don't forget the buns--not biscuits please. ;o)
