Amsterdam recommendations?

Hello, all--

I have a long layover coming up in Amsterdam again, and now that I've done the stroopwaffel tour of the city, I wondered if anyone had any other recommendations for cafes or restaurants. (Not looking for any "brown cafe" recs, thanks; life is trippy enough, in my view.)

brown cafes clarification

Brown cafes are the old, smoke-stained cafes (what the word 'brown' refers to, because the walls have turned that color from the smoking) often with carpets on the table -- they're not 'coffee shops', which is where you can buy stuff that is 'trippy', if that is what you mean. cheers, Bonnie
