120 grams of whole milk

40 grams of egg yolks

5 grams of vanilla sugar

.8 grams of salt

60 grams of flour

60 grams of egg whites

15 grams of sugar

30 grams of butter

15 grams of raisins

30 grams of butter for baking

15 grams of cinnamon sugar to carmelize

Mix half of the milk with the yolks, vanilla sugar and salt. Add the flour and mix to a smooth dough.

Add the rest of the milk.

Beat the egg whites with the sugar. Fold into the batter.

Heat a heavy cast iron skillet with the butter and spread the batter on top, strew the raisins on top.

Bake in 350F oven for 15-20 minutes.

Tear the omelette into bite-sized pieces with two forks. Dust with cinnamon sugar and serve with a compote. Stewed cinnamon apples are best.

 
I wonder how many yolks it takes to weigh 40 grams?

30 grams of butter = 2 TBL or 1 oz
15 grams of raisins = 1 TBL
