Baked Sliced Potatoes

(From one of those ancient mail-order recipes of the month club that my MIL was in called MY GREAT RECIPES MCMXXXVI, printed in Holland. Card 18 in the Pasta, Rice and Potatoes category. --BTW, that Roman numeral year is correct! I had my husband double-check me and my bifocals, and I copied it accurately.)

Lovers of potatoes will be impressed with this treatment which is the simplest possible from a cook's point of view.

Preparation time: 10 min.

Baking time: 25 to 30 min.

Oven temperature: 400 degrees F

For 4 servings you will need:

4 large baking potatoes, scrubbed & dried

1/4 cup butter or margarine, melted

1/4 cup salad oil

2 cloves garlic, minced or pressed

1/2 to 1 teaspoon salt

1/2 teaspoon dried thyme leaves

Preparation:

1) Cut unpared potatoes into 1/4-inch-thick slices. Place over-lapping slices in buttered oven-to-table, 13-by-9-inch baking dish.

2) Mix butter and oil. Brush slices with this mixture. Pour remainder over potatoes. Sprinkle with garlic, salt and thyme.

3) Bake at 400 degrees F for 25 to 30 minutes or until potatoes are done and browned at the edges. Serve immediately.

Good served with: Broiled steaks or hamburgers, tossed green salad, crusty bread.

Tips: If you wish to prepare potatoes ahead of time, slice and hold them in cold water until ready to bake. Then drain very well, blot dry, place by overlapping in pan and continue by starting with Step 2.

Caryn's notes: Sliced potatoes in Cuisinart using 6-mm slicing disc. Rubbed dried thyme leaves between palms of hands before sprinkling over potatoes. Took about 35 minutes to bake in my oven.

you posted Baked Sliced Potatoes is in Category 18, Card 59. I guess there were different issues. Mine being 1984 according to DH.

I love these recipes cards.....so many terrific recipes.

 
what a treasure. you can put these in foil or those foil packets and throw them on the grill.

add some onions and peppers for a nice variation.

 
REC: Medieval Times Potatoes. This is another one you could do on the grill...

This is one our very favorite sides -

Medieval Times Potatoes
from the Medieval Times Restaurant in Buena Park, CA

12 Servings (1/2 potato each)

6 Russet baking potatoes, cut in half
2 tbl. paprika
1 tbl. Italian seasoning
1 tbl. bbq spice
2 tsp. lemon pepper
1 cup butter, melted
2 tsp. salt
1 tbl. garlic powder

Parboil potatoes until barely tender. Drain. Mix the rest of the ingredients together. On 12 squares of foil, place a potato half. Divide the butter/seasoning mixture between the 12 packets. Fold up well and place in a large baking pan. Bake at 350 deg. for 30 minutes until tender.

 
KarenNoCA--nope, I only have that one card. I think my MIL received a small pkt frm this co as an

advertisement via mail, but she didn't sign up and gave her free recipe cards to me. I have one from this same company for brownies and there are a few more rattling around my recipe file folders. I've always wondered if maybe the Roman numeral date was a misprint as I cannot imagine my MIL saving anything that long that she didn't use. She gave me these few recipe cards in the early '90s as I recollect.

PS: I meant I have only that one card from the Pasta category! I have one from Poultry and the one for Brownies, too.
