And another holiday sneaks up on me. What's everyone doing for Easter this weekend.

My calendar must be goofed up. I cannot believe it's already Easter. We are celebrating on Saturday due to work schedules and it will simple:

bunny pizza appetizer (my son almost refused to celebrate unless bunny pizza was on the menu)

country ham (it's been hanging in the closet since hubby brought it back from his last trip to Missouri)

roasted green beans

mashed potatoes (with mascarpone)

rolls

Someone is bringing dessert.

 
I think it should be illegal for Easter to fall in March. It really needs to be kept in April...

however, since I'm not in charge of the calendar and I am in charge of having Easter at my house every year I'm powering through...

Tentative menu:

Ham (still searching for THE recipe here...)
Potatoes layered with Gruyere and Creme Fraiche
Penne Pasta with Asparagus, Spinach, and Cashews (a spring favorite... we have it every year)
Green Salad
Popovers?

MIL is bringing the dessert, since I don't like to make desserts.

As you can see, it's still a work in progress. I hope I can do something more interesting with the ham this year. I usually just bake it, and while it's good (hard to go wrong with a good ham) it's a little blah.

I've been making this ham on and off since it appeared in Gourmet in 2001. Everyone LOVES this one. Do make the chutney. I go a little lighter on the curry though.

This sweet potato puff went in a flash when I made it New Years Day to accompany some leftover ham. I would double it at least.

We are having a Mexican fiesta...

our menu isn't set yet, but it will definitely include tamales, Sandra's Chile Verde, Borracho Beans, refried beans, Green Chile Pilaf, Sopa Seca de Fideo, Alta Vista Pickled Carrots, chips, Holly's Salsa, My Tomatillo Salsa, Holly's Guacamole, and probably more dishes. We haven't figured out dessert yet. We can't wait!

 
I baked some of Ina Garten's thumbprints and filled the indents with jelly beans or mini cadbury

candy coated eggs after they had cooled, using a bit of icing to anchor the goodies. they're in the mail today to Seattle and Indiana. Ina coats her thumbprint cookies in eggwash and coconut, so it makes nice little nest-like cookies. I might make some hot cross buns for work on friday. No company planned on Sunday, so maybe we'll just have a goodbye to winter picnic.

Puts a different spin on the menu -

I'm making Cola Baked Ham with Cherry Orange Glaze (Emeril) Haven't tried it before, but sounds good

Then some kind of potato gratin and roast pumpkin, maybe some sauteed spinach,

And a pavlova for dessert, it's still really hot, so a cold dessert will be nice

Carrot Cake with Cream Cheese Frosting decorated with marzipan carrots

 
Nothing really exciting, just going to sister-in-law's and having the

traditional baked ham, garlic mashed potato, asparagus (a must!), spinach-strawberry salad, peach-pecan muffins (I'm taking), red-pepper hummus with pita triangles, and a coconut lamb cake and probably a couple of pies (apple, lemon meringue).

there will only be 3 of us . Cici, Billy and myself so..

I am making an oven roaster with a lovely lemon glaze type of thing. Some corn for Cici, sauteed spinach with roasted red peppers, a baby green salad, smashed red potatoes, stuffing, again for Cici, and probably cheesecake for dessert, or a dump cake which is one of Billy's fave treats. If I can remember how to make it. Nothing too fancy because like many of us, this year Easter just sort of crept up on me.
Sadly DJ will not be able to come home for the weekend, but he is home safe and sound back in Fayetteville NC and will have Jen with him. I have a lovely picture taken of him at the Green Ramp. A nice close-up of him with his eyes crossed and his tongue sticking out. A picture sure to make any soldier's mama's heart swell with pride! LOL ( if I can fugure out how to put it up I will)

 
Same old same old brunch. Ham, potatoes, scrambled eggs, asparagus. But last year I also set up

a do-it-yourself waffle station which was a big hit. I'm doing it again, with 2 waffle irons and a big bucket of Michael's "Dad's Buttermilk Waffles" batter. (Last year I forgit the butter-horrors!) I may make an orange curd if I have time, along with berries, cream, syrup and butter.

 
Joe, my Mom always served waffles with a custard cream sauce and berries---highly recommend

a pitcher of this as well! I never knew that waffles were eaten with syrup till I was in grade school and had them at a friend's house. My Mom was German, and I don't know the origin of the "vanilla sauce", but one of her funny stories to tell was when we went out for waffles one Sunday when I was about 4 years old and I was very insistent that the server bring me the "creamy smoothie" sauce for my waffle. I was lost without it! We always had french toast with cinnamon sugar too---never syrup.
