And for tonight's super delicious, gourmet dinner...

I'm craving tuna casserole. Problem is, I've eaten it once in my life and my mother never ever made it (or meatloaf or brussels sprouts) so I don't have a reference point. All of the recipes that I'm finding online are tweaked or improved or etc. I just want plain old ubiquitous tuna casserole. Yep, cream of MSG soup and all lol.

Do I just put noodles, tuna, cream of mushroom soup, cheddar cheese together and bake? I know it's supposed to have peas but I don't have any and I'm not going to the store just for that so maybe I'll grate some zucchini in there.

The one the only....

skyastara, the way I make tuna casserole is (besides the ingredients you listed) to mix 2/3 can (from the soup) milk with the mushroom soup, chop some onion and squirt a bit of worchestershire sauce and 1/2 can of those lovely canned deep fried onions in the mix. I bake the whole mess together then at the end I put the rest of the deep fried onions on top to finish it. No peas. Yummy.

Here's the one I grew up with....Rec: Tuna Noodle Casserole

Tuna Noodle Casserole

2 cups dry wide noodles
7 oz. can tuna, drained
1/2 cup evaporated milk
1 can cream of mushroom soup
1 cup frozen peas
1/2 cup grated cheddar cheese, or slices of Velveeta

Cook noodles per package directions. Drain and rinse. Combine remaining ingredients, except cheese, then combine with the noodles. Season to taste with salt and pepper. Pour mixture into a lightly greased12x8x2 baking dish (I use a 1-1/2 quart casserole dish). Add cheese on top. If desired, top with crushed potato chips or bread crumbs (I don’t usually do this but mom always did.) Bake uncovered at 375º for 25-30 minutes or until heated through.

Pat’s notes: Good with steamed broccoli and sliced tomatoes.

Ah Pat, this is what my mom used to do but she would not put on cheese, instead buttered breadcrumbs

and a dash of sherry or worchestershire in the mix too.

Now I'm craving this, but my tuna order form New Day Fisheries hasn't arrived yet!

Me neither

I have never eaten this either. I may have to try it just for fun.

Here is one with an Asian twist:

My mom made this one a lot:

Chinese Casserole

1 can bean sprouts
2 cans tuna
2 cans crem of mushroom soup
1 cup diced celery
1/2 cup diced onion
1/2 cup water
Canned chow mein noodles

Mix first six ingredients, and top with noodles. Bake at 350 for 30-45 minutes.

If you used regular milk instead of evaporated, left out the peas, and subbed cracker crumbs

for the cheese, you'd have my mom's meatless Friday Catholic "sacrifice." I loved it, but not as much as her other Friday penances: cheese enchiladas, crumbed fried sole and shrimp with lemon and tartar sauce, salmon souffle, poached eggs on toast with real butter. Oh, how we suffered! I really hated it when Vatican II relegated the Friday meatless thing to Lent only. Her rump roast and dried-out chicken were not nearly as good.

I think any version of tuna noodle casserole is delicious comfort food. Just use real egg noodles and good tuna (ie. albacore packed in olive oil from Trader Joe's.)

Oops, this rant didn't merit a double post. My used computer is decomposing to the point

that the swap appears in vertical columns--one word on top of another. My browser is apparently reading every space as a line break, and it's now almost impossible to read anything. It's amazing I noticed the double post at all. Am I the only one with this problem?

No matter, I'm getting a new computer tomorrow or Monday and I look forward to being back among the living!

Thanks smileys/smile.gif

I put 3 times the amount of cheese that I think is normal but other than that I think I pulled off the normal one.
2 cans solid albacore in olive oil
2 cans cream of mushroom soup
3 cups grated colby
2.5 cups cooked whole wheat elbows
1.5 cups cooked green beans
1 cup grated raw zucchini
1/2 cup milk

It was what I was hoping for. I've been craving a lot of comfort foods, but trying to stick to high protein things for the baby. Curiously, most of the comfort foods I've been craving are NOT things that I was ever fed as a child.

Oh, I almost forgot

My partner tried to convince me that diced green chiles is a normal part of this dish, and tried to trick me into adding them. LOL

You'd think so, but no, it's deviously smart...

Well
then
Is
this
better
etc.?

But
thanks
for
trying!

Tell your partner not to mess with my Lenten sacrifice....

thought I'd bet the chiles would be good, at least better than the peas!
