Rick, all my pots and pans are Alclad Master Chef, so you have more experience than you think.
I don't remember which pans you used the nights you cooked but I think you liked them. I don't have a saute that big though so I can't comment on that. the ones I do have are great with heat dispersement.
I do need to check second hand stores for a cast iron dutch oven, I don't think All Clad would be quite as good as the old fashioned iron ovens.
