just because they are soooo good. I brought them to our Labor Day Picnic at the neighborhood pool and they were gone before I could make a space for my basket on the desert table! If I weren't so lazy I would make another batch right now...............I highly recommend these to anyone who has not yet tried them.

 
Cheezz, I saw your picture and that is what inspired me to make them,

I wanted to do ice cream sandwiches too but I couldn't figure out how to keep them cold at the pool. Next time I will turn them into ice cream treats!

How did you get the ice cream the right size and shape?

 
I have seen ice cream at parties and such, kept cold in ice...

A tub of ice roughly crushed... each 'sandwich' is wrapped in plastic wrap then nestled on the bed of ice. Seems to work well. After the cookies were made, I dug out the right size biscuit cutter to match. Then I scrunched the tub of ice cream from the bottom until I had a 3/4" chunk coming out the top. Then I cut the slab off and cut out my circles. Enclose it with the 2 cookies, then pop on a tray in a freezer until I had them all done... then wrapped each in plastic. They were sure a hit around here... lends themselves to any type of ice cream!
