We just use beef - it's a celebration dish in Madeira, where beef is extremely expensive, because the terrain is not favorable for cattle. It's rolled in salt and bay leaves and cooked over the grill. When it's just family, and we have home- made bread, we sometimes just have meat, bread and olives to nibble on, and we eat outside by the fire, pulling the meat off the skewers with pieces of bread. When we have guests, we add salad and pineapple, and eat politely at the table.
I know there is a lot of Portuguese food in Hawaii. I was astonished when I looked up recipes for malasadas, having lost my MIL's recipe, and they were all from Hawaii!
