What side dishes do you prepare with the meat skewers? Do you use just beef or other meats too? Do you cook on a grill or by some other method?

I have questions! Have never been to an Espetada but know about it. I want to join you! Just a little too far away I'm afraid.

We just use beef - it's a celebration dish in Madeira, where beef is extremely expensive, because the terrain is not favorable for cattle. It's rolled in salt and bay leaves and cooked over the grill. When it's just family, and we have home- made bread, we sometimes just have meat, bread and olives to nibble on, and we eat outside by the fire, pulling the meat off the skewers with pieces of bread. When we have guests, we add salad and pineapple, and eat politely at the table.

I know there is a lot of Portuguese food in Hawaii. I was astonished when I looked up recipes for malasadas, having lost my MIL's recipe, and they were all from Hawaii!

Lots and lots of Portuguese folks in Hawaii. So Malasadas are everywhere. The most famous are from a bakery on Oahu called Leonard's. People fly over to Oahu from the other islands to shop or visit family and make a beeline to Leonard's then bring back boxes-full of them. They are good everywhere but Leonard's has the best. I'm on the opposite side of the state and a little south. You're really a busy girl and meeting up with lots of swappers. That is at Publix and is called Aprons. Cute isn't it? Were you able to try a sampling of something? Have lots of fun on your vaca.
