This is a South African one...
Two containers of the thin green asparagus rinse, and trim. Simmer in salted water until just tender. Drain.
6 Hard cooked eggs cut into 1/4s
Spicy Mayonnaise:
2 egg yolks
1 ml salt
2 ml chili powder
2 ml mustard powder (Colman's English is always good)
45 ml lemon juice
375 ml oil (I use half canola and half evoo)
Put yolks, salt, mustard powder, chili powder in food processor and whizz till thick. With machine running, add lemon juice and then slowly add oil in a thin stream.
Chill well in a bowl.
Plate asparagus spears, 1/4'd hard cooked eggs and a thin slice of lemon on plates and garnish the centre of the asparagus with the mayonnaise.
