Very good meal. Definitely a keeper.

Okay, now...what does one do with the feeling that they DESERVE DESSERT after eating a healthy meal like that?

 
Thanks also to CathyZ for the mashed cauliflower idea. It went perfectly and we are now

fans.

Used "Better Than Broth" & water to simmer the cauliflower, added some of the sauteed onions from the coq au vin, 2 tsp of butter and cracked fresh pepper.

I used a food processor and stopped pulsing when the texture was still a bit grainy. I was afraid of making it "glue-y" like mashed potatoes, so Pam's comment that this won't happen is good to know.

We ate one half of a large cauliflower for the two of us and I could have eaten the entire thing.
