our local police station. A family favorite.

Eggplant and Parmesan Meatballs

Peel, dice one large eggplant, put in steamer basket and steam until cooked.

Mix with:

2 lbs. ground beef (I use 85 to 15 percent fat)

1/2 cup Parmesan Reggiano

3 large cloves diced garlic, or to taste

1/3 cup good quality bread crumbs

2 eggs

1 tsp. dried basil

salt and pepper to taste

Make meatballs, I use a 1-3/4 inch ice cream scoop to make these (no more hand work)

You can fry these in olive oil, or bake in the oven. After cooling, you can freeze, as they freeze beautifully.

Or put into a baking dish, top with your favorite sauce, sprinkle with parmesan and bake 350 degrees for 30 minutes. Top with Jack Cheese and serve over noodles.

 
Was that the one for a salad dressig.....question was if it had mayonnaise or not?

If so,yes I did, and it did have mayo, horseradish and fresh lemon juice on a shrimp salad.
