I made these last night and we loved them. Amped them up a little bit with some more thai flavors (fish sauce, thinly sliced thai chiles, a little palm sugar and some kaffir lime leaf we had left over from the thai food I cooked last weekend). Absolutely delicious. I cant believe how quick and easy they were.
