Another vote for the Dakota Bread up at 28010 (recipe) and 28043 . . .

I used Bob's Red Mill 10 Grain Cereal mix. Used honey. Dipped and swept measured the flour.

I did use a little more water than the recipe called for (maybe a couple of tablespoons) when I poured the water into the mixer bowl. I let the cereal sit in the water for probably between 15-20 minutes. Used the KitchenAid to knead. Dough was soft, sticky ( but was a dough, not a batter), when I used a spatula and scraped it out of the bowl to let rise. Then I remembered the sun and pumpkin seeds; I just mixed them in by hand, in the rising bowl.

After rising, the dough was still sticky-ish, had to scrape out onto a floured board. But, is was for sure a dough, I divided mine into two loaves of about 1-1/2 lbs each, and put them into greased bread pans. I brushed tops with beaten egg and then sprinkled and patted on the poppy, sesame, sunflower and pumpkin seed topping.

The bread doubled easily, sturdily, Cooked in a well-preheated 425º oven and both loaves were done in about 35-45 minutes. Good flavor when hot BUT much better when cooled today!

I do not like a lot of whole grain, grocery store loaves because they are too sweet. This loaf has just a hint of sweetness, just enough to enhance the flavor. I can slice the bread very thin and it holds together well (trying to get a 1 oz slice; could not get right on the dot, but got really close). The grainy topping sticks well, especially when I made sure that it was all lightly patted into the egg-wash.

The bread has a nice chew without being tough, barely grainy-nutty sweet with out all too sugary and is absolutely beautiful, one of the prettiest I have ever made. It was fantastic toasted with a poached egg on top this morning for breakfast. It is very satisfying and filling.

Dakota bread screams for raisins and walnuts to me. It might go well with some chopped garlic mixed in it, maybe some rosemary. I will be baking this again but will be adding raisins and walnuts and making rolls. I then want to make it again but use the dough for cinnamon rolls (with raisins), it is that good.

I love it. BUT it is going to take some doing to get my husband to try it. I'll have to work on him. Maybe make some french toast with this bread and surprise him.
