Pretty much everything I've ever read from him regarding becoming a chef...

...has confirmed that deciding not to pursue a degree from culinary school and open a restaurant was one of the best decisions I ever made.

I also agree with him that it can be a highly rewarding experience if you do it for the love of cooking, and not to enter "the life".
