Any interest in Chocolatier Magazines?

...and yes, Virginia, there ARE chocolate addicts and we are watching one of them right now bite her wrist to keep from requesting these magazines.
 
oh barbara, while I would LOVE to have those magazines, I just had my annual exam and Doc has given me 3 months to drop 10 pounds or she's putting me on cholesterol medicine. So I thank you from the bottom of my heart (and apparently, my LDL-clogged arteries) but I must decline your kind offer.

Are there any culinary schools around you? Perhaps they could use them.

Seque--are you anywhere near Warrenton or Marshall, VA? I've just bought "The Red Truck Bakery Farmhouse Cookbook" and they have two locations. Food looks wonderful.

I get the health issues. I have very high A1C levels and am not overweight. Doc says I am genetically inclined for type 2 no matter what I do :(. I need to learn how to bake and not indulge quite as much and it is proving to be VERY hard!!! I really do not use the Chocolatier magazines other than looking at them so I thought it was time for them to go. I will find them a good home :)

I have looked at the Red Truck books for a while but have not gotten them yet. Really want to visit the store but afraid of what I might eat, LOL!!!

My daughter still remembers the dyslexic chocolate sauce you sent us SO many years ago. She absolutely loved that stuff. Hey, maybe I should make a batch and give her some for Christmas.

mcm, thanks to Deb in MI, I developed a smaller version that only makes 1 + 1/4 cups of chocolate sauce. Be sure to use the best chocolate you can lay your hands on. I always used Callebaut, but haven't been able to afford it's increase price. Lately I've used Trader Joe's 72% blended with its Milk Pound Plus bars.

Sadly, it works...but in no way compares to Callebaut.

Remember, check the chocolate temperature before adding the butter at the end. It should not be hotter than 140 degrees or they will not emulsify. I use my stick blender to "conch" the chocolate mixture.
