These do look delicious, Deb. I've made the Andes Mint cookies for a few years now...

...and my family loves them.

Chocolate, more chocolate, and mint. Gotta love it!

It's so funny - everyone I gave them to last year asked for them again this year. And..

I dropped some off at our post office last Christmas and the workers sent me a 'thank you' note saying they loved them.

My sister gave an assortment of cookies out last year, including these (I only gave these - lol) and she said, everyone went wild for these and that's all she's giving this year:). We are attempting to make about 300 this Sunday!

REC: Chocolate Mint Cookies, made with Andes Mints.

Chocolate Mint Cookies

3/4 cup butter
1 1/2 cups brown sugar
2 tablespoons water
12 ounces semi sweet chocolate chips
2 eggs
2 1/2 cups flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
70 Andes Creme de Menthe Thins

Melt butter, sugar, water in saucepan on low until melted. Add chocolate chips and stir until melted. Remove from heat. Allow to cool about 10 minutes. Beat in eggs. Stir in combined flour, soda and salt; beat just until blended.

Chill one hour.

Take teaspoons of dough and roll into balls. Place on foil lined cookie sheets (parchment paper) and bake at 350 degrees for 9 minutes.

Immediately place one mint candy over cookie, allow it to melt and spread over top of cookie.

Remove to cooling rack.

Makes 70 cookies

Planning to try these Oatmeal Peanut Butter Chocolate Chip cookies but

want to try them both ways -- a batch leaving the oats whole (per reviewers' suggestions), and a batch grinding the oats per the recipe, to see which I like better.

I'm hoping they'll also be good for making ice cream sandwiches .... we'll see. smileys/smile.gif

Deb any tricks for them not leak? Mine always seem to leak.

I've been making these since they were posted back on Gail's(?) and I love them, but many seem to leak on me, which lets lots of the love out of 'em.
