Any of y'all ever heard of Pollo Al Ajibe? (m)

A fabulous restaurant here in Dallas called La Duni makes it - it is Roast chicken with sour orange/champagne pan mojo sauce. I don't know if this is their invention of if this is a "gussied" up version of a traditional latin american cooking method. Would love to have the recipe.

 
Interesting Dish

I was intrigued by Pollo Al Ajibe, and it's Cuban in origin. Translation from Babel is, lol, Chicken to the Ajibe. There is a restaurant in Havana named El Ajibe. In a short time, I did not find any recipes on the net.

If you want the works as far as Cuban food, go nowhere else but here. This is rich and invigorating country food for which even the proudest farmer in the Vuelta Abajo would ask for a second plate. This large, bustling outdoor restaurant dishes up the best chicken on the island. Nine out of 10 customers order the roasted chicken, which comes soaked in a deliciously pungent sauce made with fermented oranges, chicken drippings and garlic. Then there are the spicy black beans, lightly boiled white rice and deep-fried plantains that accompany everything. If you are not a chicken eater, try the deep-fried pork. Service is quick and professional. They also offer one of the best wine lists on the island, and all the bottles are perfectly kept in a temperature-controlled room.

You certainly did find an original. I grew up in Dallas, but rarely go there, I like Ft. Worth better, still behaves like a city in TX. I do love the cuisine in Dallas tho. If we find the recipe, I can't wait to make it. You never know, maybe La Duni would give you the recipe.
