Any recommendations on making turkey gravy - without the turkey...

I want to have it over leftover turkey. I'm thinking turkey and biscuits, but no turkey broth juice to make gravy with. I guess I could use canned chicken broth (none in freezer). Got any ideas? Just make a white sauce and use broth istead of some of the milk? I usually make homemade gravy while bird is finished roasting, but in this case...

Oh, maybe I'll just go to the store and buy prepared turkey gravy. Unless someone has any ideas?

I've used some turkey legs - cheap, lots of flavor

Roast them off to get some good flavor then make a quick stock (especially with a pressure cooker) with them and make the gravy from that.

Some stores carry turkey stock and since it's getting to be late in the year, they might have it in stock now.

 
I buy great big packages of chicken thighs when they are on sale & make kettles of broth to freeze.

It is even better if I remove the chicken from the bones when it is just done, then put the bones, skins, etc. in the oven, roast & add back to the pot to keep simmering. The dark meat makes good enchilada filling.

You could just buy a rotisserie chicken, put the meat aside & use the carcass & wings to make a small pot of broth for gravy.

 
My store always carries frozen turkey legs and thighs. I just did a small...

...turkey on the bbq rotisserie and used a package of legs for the gravy.

I roasted them on a rack in a roasting pan just like I would a whole turkey. I used the drippings to make gravy and ground the leftover meat for turkey spread.

Very frugal, and gets the job done.

Thanks everyone. I found a container of chicken broth in my freezer, so I

used that. I guess I would've just made a white sauce if I hadn't found it, because I wasn't about to roast any part of a turkey just for the stock -- tonight. Next time I'll be sure and save it clearly marked in the freezer.
