Any suggestions for leftover tomato chipotle sauce?

I made this recipe last night halving the salmon but made the full amount of the sauce. The sauce yielded 2.5 liquid cups. I pureed half of the sauce which I wasn't crazy about - probably a texture thing. The 1.25 cups left that I have is quite tasty and I'm looking for any ideas to use it up.

Edited to say I used 26 oz. of Pomi chopped tomatoes. Really good tomatoes!

Mix with mayo for chicken, turkey, pork sandwiches. Good on scrambled eggs. Cold

tortilla with sliced avocado, meats, etc.

 
For future could you puree half the sauce & leave the other chunky then...

mix together? That might help the texture issue.

 
At the Magnolia Grill in Austin they serve it over a fabulous omelet

containing slabs of avocado, cheddar, and other stuff -- it is wonderful!

 
Wonderful ideas everyone, thanks! I'm making a simple dill sauce with

lemon for my leftover sockeye salmon tonight.

I will be making one of your suggestions for the tomato chipotle sauce tomorrow and will let you know what I've made.
